Chicken cordon bleu Indiana Style

These are definitely a hit up at our Campground I thought you might like these. Core and half some large jalapenos. Stuff each half with cream cheese and sprinkle with your favorite chicken rub. I like using cream cheese since it holds its shape the best and doesn't ooze out at high Temps. Then set aside.
Now take some chicken thighs, remove skin and bone. Replace the bone with the stuffed jalapeno wrapping thigh completely around it. Apply a generous amount of rub on thigh and wrap with bacon applying more rub
Cooking about 375 or 400 turning frequently until chicken hits temp and you've consumed a few beers with your friends
