Turkey leg and thigh timing at 270 degrees

hello
i just put some turkey legs and thighs on the egg at 270 degrees indirect,I learned here yesterday to get them to around 165, my question is roughly how long before I should check their temp? And should I flip them at some point? Many thanks!!
