OT since all done on Traeger (not all together), easier than BGE in frigid weather...

I've done smoked cheese many times in the egg, using soldering iron and wood chips in soup can. Usually 1.5 hrs was sufficient and ice cubes would turn quite brown and liquidy. Cheese would smell strong and needed at least 2-3 weeks to mellow.
Pellets in AMAZN tray generates much 'milder' smoke. Went for 2.5 hrs, burned less than 1 row of pellets (created break between burning and unburned pellets to extinguish the fire). The ice cubes barely melted and just the top layer turned brown slightly. Finished cheese don't smell like ashtray, hope it picked up enough smoke.
Made a cuppa with the ice cubes, nice hint of smoke, coffee also tasted 'more roasted' if there's such a thing. Saving the whole pan of ice cubes in the freezer!

@DMW Thanks, it's interesting indeed, in hind sight I should have stirred the cubes a few times to pick up more smoke.
@Hans61 Thanks, it's very different than chicken from BGE, kind of hard to describe. Also, leftover chicken from BGE tastes way too smoky. Still prefer pulled pork and brisket from BGE though. Ribs is a toss up between BGE and Traeger. Even during the summer I've been using Traeger more frequently.

Woohoo, no waiting!
After resting overnight in fridge, we tried the mozz ... wow, taste just fine, not acrid like ashtray!
Huge difference between wood chips (without lump) and wood pellets cold smoking. With wood chips the ice cubes turned into muddy brown water in 1.5 hr, vs. pale brown mostly still frozen ice cubes after 2.5 hr with pellets.
