I've done smoked cheese many times in the egg, using soldering iron and wood chips in soup can.  Usually 1.5 hrs was sufficient and ice cubes would turn quite brown and liquidy. Cheese would smell strong and needed at least 2-3 weeks to mellow.

Pellets in AMAZN tray generates much 'milder' smoke. Went for 2.5 hrs, burned less than 1 row of pellets (created break between burning and unburned pellets to extinguish the fire). The ice cubes barely melted and just the top layer turned brown slightly.  Finished cheese don't smell like ashtray, hope it picked up enough smoke.  



Made a cuppa with the ice cubes, nice hint of smoke, coffee also tasted 'more roasted' if there's such a thing. Saving the whole pan of ice cubes in the freezer!
