Smoked Hot Chicken Salad...Jesus Approved!

Found a recipe from a Church Women's Group Cookbook from my wife's Mom. They compile recipes and sell them as a fundraiser. There is a recipe for Hot Chicken Salad that is topped with potato chips and it looks amazing. I tweaked it a little bit and smoked the chicken before mixing and throwing in the oven. I should have just made the whole thing in the egg with a cast iron pan but it was put in a CorningWare pan so I just baked it in the oven. It was served on Hawaiian Rolls and it was SO GOOD.
