Sweet Potato Stack

today I bought a 6.5” cast iron skillet that fits in a medium. To try it out I coated it with coconut oil, layered thin sliced sweet potato, seasoned it with Chinese 5 Spice and Pineapple Head. Here’s the first pic.

That was one large sweet potato. More pics and reports later after the cooking is done.

Okay it isn’t pretty but it tastes good. Next time I’ll foil it to help it cook more evenly.
