New Smoke Thermometer\Prime Rib Cook

I received my new Smoke thermometer just in time to do a cute little prime rib for sunday night dinner.  I am  impressed with the meter.  It has great range and I love that it has a grill grate probe.  I seasoned the prime with hardcore carnivore black, seared on all sides and then onto the egg.  I did raised indirect at about 350.  I did not open the egg until the smoke showed 115 and pulled at 120 and tented for 15 minutes.  I could have maybe flipped it once during the cook, but it still turned out great. I completed the meal with taters, bread, homemade pickles   I love you can keep an eye on grill temp from the couch. I can see how this will be very nice during long cooks.
