A-MAZ-N Pellet Smoker for Turkey?

Trying to get that nice red color on my turkey that I see in some turkey cooks utilizing cherry wood. My concern is over smoking it, anyone tried anything like this to enhance color? I’ve done mad Max’s Turkey in the past but wasn’t able to achieve much color on the skin. The below Fogo video is what got me thinking about it.

Smoke it and use cherry chunks

I used a few cherry chunks last time, maybe just not enough.

Put a little lump in a spice mill and mix that into your rub. There are a number a rub formulations that utilize carbon for color.______________________________________________I love lamp..

It's very easy to over smoke a bird. Don't shoot for net worthy perfect color pics as a priority. Shoot for flavor....you'll be eating it.
I like apple or peach for the birds, and a little dab will do you.Living the good life smoking and joking -
No experience smoking turkey, but I'll say that experience has told me to excercise caution when smoking poultry - a little goes a long way.
