Can you use the reverse sear method if your steaks are only 1" thick.

@DMW is correct, rare occasion. You gotta go easy on the cook, around 105 it, then screaming hot and brief sear. Assuming MR.Sandy Springs & Dawsonville Ga

I usually buy a 1/4 cow and I can not get the processor to make the steaks thicker than 1" must be his processing equipment. The farmer is a friend and he uses that processor.

I'm all in with support of the "don't go with the reverse sear if the steaks are less than around 1 1/2" thick". The design behind the reverse (or forward) sear is to get an even cook across the width of the protein. Once you get the steak too thin the chances of that happening are quite diminished so just use the sear to finish the cook.
Just an opinion so fire it up and give any style of cook a go. You will learn something from the exercise and what's the total investment?? The key is to take away something of value from every cook (unless the adult beverage storm clouds prevail). FWIW-Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.
