When in Ireland...

We were in Ireland last month and one of the few things that were really good was an app at our hotel at the Blarney Golf resort. It was a Brushetta that was like a large piece of soft garlic bread with beats and goat cheese. it didn't sound good at first but it was amazing. wish i took a picture to recreate it. does anyone have a similar recipe that to start with to recreate this on the egg?

Beets and Goat cheese aren't an unusual combo, I would try that in a heart beat.
Try roasting the beets on the egg. You could grill the bread, also. Otherwise, you would just add the goat cheese and maybe some sort of dressing to the topping?
