Petite Shoulder Tenders (Beef)

New to me, and they turned out really good. Publix is carrying them for $7.99 per lb. They aren’t filet mignon by any means, but they are very tasty.  IMHO, better than flat iron.  Shouldn’t have used a red cutting board for pic purposes, but you get the idea.

First up-as always a great cook and presentation.  Even I can appreciate the outcome, board color be da-ned.  Never have heard/seen that cut. (I have lived a very sheltered life.)  I'm partial to flat irons for the price but I can see where that cut would make me move onward.  Most eggcellent.

Shoulder tenders?  Never heard of them.  I'd have thought it was tenderloin.

I tried some a while back but seem to recall them being more in chunks. I was impressed with the tenderness. Havn’t Seen them in a long while.
