2nd brisket stall?

lbbf
lbbf Posts: 33
Cooking my 3rd brisket and this one is different.  Stalled at 172 for an hour and half. It ran up to 192 and has now been stalled there for over an hour. Is this normal? The other two I cooked did not stall a second time.  HEB Prime 1 brisket at 250 the whole cook. I did not wrap or foil it.

Always remember, "The friggin cow drives the cook."  And as noted by @theyolksonyou  anything is fair game.  I cooked one last week that at the 4 hour mark (running around 275*F on the dome) was at 188*F.  Then went thru the stall cool-down phase ( down to 182*F) and finally hit the finish-line at the 10 hour mark.  (around 9.5 lbs post-trim)

I was fairly certain that everything was ok but getting some reassurances helps. Thanks!

What’s an lbbf?  I’m familiar with LBFM from my Navy Days, but LBBF is a new one.

I hear those HEB prime 1s are awesome.    Standing by for the report!     How much are those prime 1s per pound? I have a business trip to Austin I may have to bring my cooler on...

@SSQUAL612 - I doubt there are many here who know about the LBFM's.  However, the inter-web has the power to fill the void.  Adult Disneyland comes to mind =)

@GoooDawgs - I have no answer to your question but I am a big fan of the HEB on-line options and even more so since Harvey.  If you have the option to grab some of their  protein I would make sure you are enabled to do so.  Based on all I have read here you will be justly rewarded.  FWIW-

Exactly @lousubcap!   And just when I clean out my stash of Costco prime to make room for CAB Prime, here comes my opportunity to load up on the Prime 1s!   Nice problem to have... =)=)

Brisket was a success! Sorry no pics. Pulled it at 198 when it probed with very little resistance. It took nearly 3 hours to go from 192 to 197. Came out very juicy and tender.
