Turducken Roll

Just ordered my first Turducken for the annual thanksgiving gathering. As no one in the family has had it we went with the roll (1/2 size basically) and we will still do a ~10-12# bird for the traditionalists.
Pick it up fresh made on the 17th for cooking on the 18th. Cant wait for this one.

@xfire_ATX - select soccer must have changed as I did a good bit of it (team queen-aka manager, with showcases, Disney just after Xmas etc) but was never on the road over Thanksgiving. Geez-as bad as the retailers...
Good luck with the Turducken roll (what-didn't make your own...)

Turducken is something everyone should try once. Never met anyone (including me) who wanted a second one. Not that it was bad or anything, it just didn't live up to its hype.Cincinnati, Ohio. Large BGE since 2011. Still learning.

I made one several years ago. Started with 3 whole birds and a ton of knife work later: Turducken. Lots of work.
You made the right decision on have your butcher do it for you. -
Several years ago I worked for a man that was, putting it nicely, well off enough to put himself through a culinary academy. He did this because he was bored, not for a career change.
Any who, he made 3 Turduckens and gave them to us employees to cook for Thanksgiving dinner. We appreciated this for the work involved in it, and the fact that he was a good boss.
I liked it, the flavors blended very well, and the stuffing he used was all fresh made. I haven't made one myself, so don't know if it was some way he spiced or prepped it .

Don't oversmoke it because the stuffing is unforgiving if tooo much smoke.

I did one a couple of years ago for Christmas.
Its a fun cook with good presentation. But it was a lot of work for the reward.
The roll will be less of a problem but I remember all my Cajun buddies told me to cook it at higher temps because if not it won't get through the danger zone in 4 hours."Brought to you by bourbon, bacon, and a series of questionable life decisions."

Okay since I am doing both a turkey and the Turducken Roll I am going to borrow from a neighbor his Grate Stacker (like below) and put the roll on top and a 12# spatchcocked bird on the bottom. Am I on the right track? Will the bird fit under?

Today was the day for my Turkey and the Turducken Roll
Spatchcock Turkey under the Turducken Roll. Right on top of each other and the Turducken was way up in the dome.
Forgot to get a finished whole turkey shot but here it is carved. Brined 12 hours, EVOO, Salt and Pepper.
And the Turducken Roll- Stuffed with Dirty Rice, got it here if you are interested in mail order or live in Central Texas. The turkey in this was better than the other turkey which was good. The duck was delicious but the Dirty Rice really stole the show.
