OT: Your Favorite "Fall Meals"??

Its finally cooling off down South and I'm starting to get those "make me fireside food" comments. 

Looking for some inspiration here. What are your favorite Fall dishes?

We did honeycrisp apple, bacon, and smoked Gouda grilled cheeses on Daves Killer Bread for lunch. 

Tasted better than the pics but I was rushing to a conference call so no time to play with my food.

Braised Short Ribs over parsnip mashed potatoes.

baked acorn squash, baked apples, apple pie(never make it but its time), baked beans(homemade not canned but served with butter toasted brown bread from a can), meatloaf, chowders, stuffed cabbage

Roasted tomato soup with any variety of grilled cheese.

Soup/stew season, plus lots of braises. Ropa Vieja, Perníl, Carnitas, short ribs, Coq Au Vin, boeuf burguignon...

Change that to over cheese grits, and I’m there with you.

Beyond that, as @eggcelsior mentioned, soups/stews/braises.  I’m making chili with leftover brisket from this weekend today. Our neighborhood does Halloween Sunday afternoon, so I’ll usually do boeuf bourginion for that, do the prep and then it can sit in the oven while we do costume contest and trick or treating.  It’ll be ready to pull out and cook some egg noodles when we’re done.

Also, we go back to a hearty meat/veggie pasta sauce, over the summer it’s a quick marinara if we have pasta.

Roast chicken makes the house smell so good, and then making soup out of the leftovers. Baked beans and hot dogs as Saturday night dinner. My mom’s corn chowder (always served with fresh baked blueberry muffins as a reminder of summer).

Chili, chili dogs, chili mac, ghoulash.
Pot roast, veg.
Meat loaf.
Stuffed peppers.
Chowder is getting egged soon.

Brent - that plate is magazine worthy.  Nice call on the pickles.

@blasting, thank you brother. Those are actually green apple slices. On the sammy. Goes well with the cheddar.

@fishlessman I think I just figured out what your dog rolled in 

Man just seeing that made me cringe. We used to take that stuff out on long field exercises and we had a few flats of it downrange. Heated it up in the engine block. 

I think I have probably 20 cans in the crawl space in an emergency kit but short of nuclear war I don't foresee another bite of it crossing my lips.

@bgebrent after feeding Melissa her Gouda and apple grilled cheese today (where she asked "are we going to have soup?") I just showed her this pic.

She said, "man he really is just..." and paused. 

I said, "You can say it. Better than me. I'll remember that when you need a ride to the hospital"

Yo Fish.....what are your ingrediants? Reason I ask is I have been making mine for years with BBQ sauce, onion, peppers, brown sugar, ketchup a dab of mustard and red wine vinigar. I like mine but curious what you / others use? Huge fan of the Joe!

Circling back to the OP's question, I make a Green Chile Chicken Stew and serve w/ flour tortillas that lead into Chicken enchiladas.

You have to think of it as you would ZZ Top's Waiting For the Bus >>>Jesus Just left Chicago. Another example would be Jack Straw >>China Cat  >> I Know You Rider. You can't have one without the other. 

Back on point,I have it as a stew on night one and then as enchiladas on night two. I do believe you have sent me into this weekends dinner meals grocery list.

Chili, thinking of a big pot of ham & bean soup, Sunday made 6 dozen meatballs and a small vat of red sauce.

Legume

Posole, chili, shepherds pie, meatloaf, soups, lots of soups, curries, lasagna and wings, because always wings.

I know one thing, I butter my bun and put it on a hot cast iron griddle to brown it. Helps keep the bun from soaking up and moisture while you chomp on it. It is time.
