Beyond that, as @eggcelsior mentioned, soups/stews/braises. I’m making chili with leftover brisket from this weekend today. Our neighborhood does Halloween Sunday afternoon, so I’ll usually do boeuf bourginion for that, do the prep and then it can sit in the oven while we do costume contest and trick or treating. It’ll be ready to pull out and cook some egg noodles when we’re done.
Also, we go back to a hearty meat/veggie pasta sauce, over the summer it’s a quick marinara if we have pasta.
Roast chicken makes the house smell so good, and then making soup out of the leftovers. Baked beans and hot dogs as Saturday night dinner. My mom’s corn chowder (always served with fresh baked blueberry muffins as a reminder of summer).

Man just seeing that made me cringe. We used to take that stuff out on long field exercises and we had a few flats of it downrange. Heated it up in the engine block.

Circling back to the OP's question, I make a Green Chile Chicken Stew and serve w/ flour tortillas that lead into Chicken enchiladas.
You have to think of it as you would ZZ Top's Waiting For the Bus >>>Jesus Just left Chicago. Another example would be Jack Straw >>China Cat >> I Know You Rider. You can't have one without the other.
Back on point,I have it as a stew on night one and then as enchiladas on night two. I do believe you have sent me into this weekends dinner meals grocery list.
