After years of practice looks like I finally figured out how to get crispy skin on juicy perfectly cooked turkey. The key: Dry Brine Comments

I can almost smell that through the screen. Looks great!Wisconsin, lbge, MM, kab, pig tail flippers, bear claws, and more rubs than I will admit to.

I have been working on a dry brine that consists of a few different salts and savory dried spices for quite a while. It should be available this week. I dry brined and air cooled these pieces overnight. I also sprinkled a little baking powder on the skin to help dry it out. The meat was juicy and perfectly seasoned throughout.
