Level Upped My Cheese Game! (pic heavy)

I love it when a plan comes together!  I've cold smoked cheese with my A-Maze-N pellet box a couple of times now, but I had to borrow SWMBO's baker racks - which are rectangular.  Also, she's concerned about me ruining her stuff... so I

So that I maximize the surface area to hold more food!  I plan on doing cheese and jerky with these things...

    These cheesy little racks can't handle any real heat as the finish peels off easy but for smoking cheese and jerky they will be perfect.

    Yeah - they were touted as "steamer racks"... but I'm starting to notice a little rusting after a trip thru the dishwasher.  I'll report back later...May have to handwash and oil going forward...

    3.5 hours on a 72F fall day...  over the A-Maze-N box pellet smoker of hickory pellets.  Pulled the KickAsh basket and platesetter out.  Had 1 cheddar block on the bottom rack take one for the team and got all melty... so I need to figure out a way to prevent that next time... May be as easy as using an aluminum pan...

    This is how I do it. A pan of ice cubes on platesetter helps.

    A little foil tent or a pan a couple of inches above the tray will do the trick. I had the same problem the first time I used my pellet tray in my Weber Kettle.
