OT: Your Favorite "Food" Books??

I told my wife for Christmas this year I wanted to get some books on different types of cooking.
Not specifically "grilling" books but I'll pick up a few as well.
Different types of cuisine, styles, techniques, etc.
Stuff to just broaden my horizons.
What are your suggestions/favorites?

Kenji of Serious Eats just started a daily list of his top cookbooks and books about cooking. Might be worth following... See below for link to first post.

He also has a good list of cookbook essentials.

Salt Fat Acid Heat is a good one.
I just recently bought The Science of Good Cooking. I have picked up some pearls of wisdom.
Tartine Bread is good (among others) if you are chasing the perfect loaf.
There are others, but I think these were influential in helping me be a better cook.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

Freshly-roasted green chiles are available more and more, have reached the Mississippi at least, don't deny yourself.
Someone here recommended this one; outstanding!

Great references. All really depends on cooking vs baking. Going astray from the cooking stuff is where greatness occurs. Following the baking stuff is results oriented.Sandy Springs & Dawsonville Ga
