Madeira, cream and mushroom sauce ... great for ribeye, filet mignon, etc.

A few weeks ago I put up some shots of filet mignon with a lovely sauce. Since then, and for @Carolina Q and @Eggdicted_Dawgfan, SWMBO has been perfecting it. Yes, it's her recipe @DoubleEgger so not playing what I assume is the @bgebrent game :). It turned out that the deal breaker was using a pure white onion, it's natural astringency compared to normal onions was a perfect match for a full doce Madeira. Full details here:

    Someone on a FB group thought this would work well with chicken ... not convinced tbh but I'll give it a go.
