Salmon Belly

My local fish monger has salmon bellies @$1.95/lb. Sounds like a great deal. Have done many salmon steals and filets in bge but not sure about bellys. maybe just smoke and make a dip? any ideas are appreciated.

make croquettes, deep frying helps with the fattiness

braised the salmon in butter, maybe 4 pounds meat shredded, 2 red onions, 2 large jalapenos, 2 sticks celery, 1 sleeve ritzs crackers, some mustard, pepper, onion and garlic powder, and some cayenne, about a cup and a half mayo. mix it all up and fold the salmon and some panko in. deep fry. sauce was mayo with a couple tbsp franks, green relish, and a shot of honey
i braise it in butter wrapped in foil and then shred the cooked meat. good plunked into some sort of chowder or with a dip

Thought bellies were was most of the toxins are? I usually trim it away on fish I catch, its usually the most "fishy" area as well. Cheeks are great as mentioned above I always take these off fish 2lbs or bigger.

With the Salmon, you add the panko into the mix of ingredients then roll in the crushed Ritz Crackers?
The other veggies get mixed in raw then fried? Or do you saute veggies a little first.

mix everything up wet except the salmon and panko, fold the salmon in so it stays in bigger pieces, should have said dust with the panko. the deep fry or make pattysPhoto Egg said:
