BS Shrimp Fried Rice Tips

I made shrimp fried rice on the Blackstone before and it turned out pretty good but I wanted to see how you all did it. What order to you cook everything? Do you season the shrimp? What type of oil?  Wyatt 5 vegetables? Onions, garlic, ginger, carrots, peas, snap peas, etc?! Anything else?

    have only woked it but canola oil for the cook, sesame as a finishing flavor at the end.  a slurry of corn starch oyster sauce,soy, maybe fish sauce to build up the flavor of the rice. i put some bean sprouts in. i also cheat and buy white rice at the chinese takeout a day ahead. theres usually an egg in there

    I am a peanut oil guy myself. It has a high flash point and is ideal for hot flash type cooks. I start out with a the oil, couple of eggs and scramble on the flat top.....then add the rice, onions peas and carrots. Pull pork is an excellent alternative to shrimp, but often I don't add any protein. I add a little soy soy sauce at the end for flavor and color.

    On a slightly related note, when I make rice (white or brown) I have started using Coconut Oil instead of the butter, canola or olive oil I'd typically use.  It gives a really nice nutty background flavor to the rice.  Definitely recommend it.  (the coconut oil I've used is a solid white mass in a jar)

    On cook order, put the shrimp on last in terms of things that need to cook.  You might toss in some green onions or other herbs at the end, though.

  • A few random tips.

    Full blast heat, let it preheat longer than normal. Heat is key.

    After cooking your rice, spread it in a thin layer and aim a fan at it. So you end up with dry but not stale rice. I usually season the rice with any dry seasonings at this point.

    ON the BS, I start with the protiens and root veggies, After the protiens are close and the veggies start to soften I add rice and egg and once the egg is fried I throw some sesame oil and soy sauce just before removing from heat.
