Bavarian Meer Hall Pork Shanks

I'm a great fan of Andrew Zimmern (Bizarre Foods) and found this recipe for Bavarian Beer Hall Pork Shanks. Has anyone prepared this on the Egg? http://www.foodandwine.com/recipes/bavarian-beer-hall-pork-shanks My Lodge cast iron skillet is ready willing and able!

    The lard part is a bit off-putting (I know there's pros and cons) but I guess as long as I keep that our little secret I'll be fine. I'll give it a try and report on how it turns out. All additional comments welcome.
  • I can never find Pork shanks. I'd love to cook some.

  • I just discovered a local butcher (Bolyard's Meats and Provisions) that offers only meats from local farms. I'm hoping they have these since on the website the owner says, "the job of finding the way around and utilizing all the parts of hogs, lambs, and goats, became my job, and I developed a deep passion for it."
