Thank you @lousubcap.  With the help of Scotty I believe I will cook them longer next time. I'm guessing I don't really know when the toothpick actually passes the test. Maybe the finish line is when the toothpick has even less resistance. Going back for more. Not giving up.

@Eggdicted_Dawgfan - the tooth-pick test indicates victory when you can insert it into the rib meat (any protein cook) and withdraw with no resistance.  You have a great reason to go again as I see you will.  Way to get after it.

Agree, just make sure the toothpick is hitting all meat, and not fat.

Yep I think I was overly anxious and pulled them too early. I feel more confident already.
