Fire (and a bit of beef) to burn away the wounds of the week...
Even better when the beef is tri-tip on sale for $4.99/Lb. at the local grocer.
Reverse sear, 250ish with Dizzy Pig Raising the Steaks and a cherry chunk until 120, rested for a while and seared.

I have tried tri-tip a few times and cannot get the hang of it. always tough for me. yours looks great though.

Also needs to be sliced across the grain or it will be tough. Pay attention to the grade of meat, don't get anything below choice.
I also marinade in beer for at least 24 hrs.

Where's @SoCalTim? Love tri-tip but can't get it since we left So CA a few years ago - other than SRF which we make for a special treat. Enjoy the great cook!
