Grilled shrimp with eggplant and peppers

Farmers market had some beautiful eggplants and nice peppers. Recipe was adapted from something I googled from bon apetit. 



Ground coriander got toasted first, then in went the onion. Finally, green peppers and a hot banana pepper and garlic. 



After that was done, eggplant was grilled:



All got tossed together and added red wine vinegar and salt. Then some fresh basil on top when it cooled a bit. 

Shrimp were our usual, grilled shell on after tossed with olive oil, pepper, garlic powder, smoked paprika and a little salt. 





Plated shot sucks, sorry. Tried to fix it but still didn't help much. If I did this again I'd cube up the eggplant and probably roast it longer.
