    I am sure you are looking for the burgundy lee drummond recipe which was posted which freeze very well, but here is a great one if you have too many shrooms.

    Pickled, Mushrooms, Richard

    INGREDIENTS:
    4 Lbs. Fresh Button Mushrooms
    4 Cups Onions, Large Slices
    1 Cup Water
    1 Cup Vinegar
    1/2 Tsp. Marjoram
    1/4 Tsp Cloves, Whole
    1/2 Tsp. Celery Seed
    1/2 Tsp Mustard Seed
    1 Tbs Salt
    Couple Drops Hot Sauce
    1/2 Cup Olive Oil
    2 Bay Leaves

    Procedure:

    1. Add water, vinegar, onions & spices into large cooking pot and cook for 5 minutes; add mushrooms, cook 5-8 minutes. Remove mushrooms. Add olive oil to remaining liquid, bring to boil and add mushrooms back. Let stand 3-4 hours, Place in glass container, cover with liquid and refrigerate
