OT-Another butt

Just finished this one. My usual rub with Hickory chunks in my new Akorn Jr. Not sure why the bark sometimes splits apart like that. It's good bark, but it sometimes has some gaps.
This 5-6 pounder went on at about 10 this morning, started at 275°, but brought it up to 325° for most of the cook. Should have left it at 275 as it finished at 3:30 this afternoon, about 1 hr per lb. I'm not hungry yet so it's in the cooler now. Plus, I forgot to make the slaw so I'm off to the store.

Overnight cooks and temp controllers are fading from memory! My Akorn temp stayed right where I set it! Egg does too when I use it for cooks like this. No Maverick either, though I did check on the cooker temp from time to time. First time I used the T-pen, meat was 170°. Next time I checked, it was at 205°! Am I good or what?!

I hate it when I go to the kitchen for food and all I find are ingredients!
