Eclipse Butt
I had the day off and while waiting around for the eclipse I decided to work on dinner at 11am. What to make you ask? Loin or butt? Eclipse Butt, that's what. It took FOREVER but came out pretty amazing imo. It was my first attempt at one on the Kamado.
It was a pretty basic prep, only some coarse ground salt and pepper and a little rib rub just because. It wasn't planned out as I was going to do this the following day.
It all started as a 6lb'er and went on with a fresh bowl of large lump, a mix of hickory and pecan chunks and indirect at about 250, it seemed to want to sit there perfectly without babysitting so I let it be. 9, yes almost 9 hours later it finally hit 195 and got yanked off the KJ. We let it rest for about 30min, dinner was long overdue and we tore it up. It's easily one of the better pieces of pork I've pulled off this thing. Just enough smoke to be interesting but not overwhelming. It was equally suited to forkfulls, sandwiches, nachos, and maybe even some soft tacos later with some of its frozen remains.
Not the best presentation but it's the taste that counts.
