Corn in your salsa? I guess it adds sweet to the mix.

We take fresh garden vegetables, tomatos, garlic, peppers, corn, and onions and slice in half, coat with evoo, salt and pepper and smoke for 35 min or till the tomato skins pull back. Everything in the ninja except corn, add rotel and fresh herbs. Pour into a bowl, cut cooled corn off the cob and add. Adds a great smoky flavor to the salsa

Do you drain tomatoes on wire racks before ninja

No, just pull the skins off

What kind wood for smoke?

Apple and oak. Since it's a short cook I throw in chips with a couple of chunks generally around 225
