    I'm fairly certain Chef JJ's (either Broad Ripple or downtown locations) should have them.  I haven't been downtown, but the Broad Ripple store has a good selection of woods, including post oak, which I've never seen around here.

    I always turn my butts once at about 160 and get good bark on all sides unless I decide to wrap/foil.   S&P work great with just a little garlic powder for me.

    I have a buddy who owns a restaurant and does catering.  Smokes in this ginormous beast. Now that's a Unit!   He only uses smoke. No salt, no pepper, nothing but oak and hickory.  Folks seem to love it.  Me, I'm a coffee rub guy. 
    Richmond and Mathews County, VA. Large BGE, Weber gas, little Weber charcoal. Vintage ManGrates. Little reddish portable kamado that shall remain nameless here.  Very Extremely Stable Genius.

    Lookin' good.  I'm in Brownsburg, pecan is all over most of the stores around here...Ace, Sullivan, Lowe's, etc.  Wal-Mart is kind of seasonal in some locations with anything other than hickory/cherry/apple/mesquite from what I've experienced.  

    I tried a naked butt yesterday.  Gave me something to do during the eclipse.  Little did I know it would turn into a 9 hour commitment.  It turned out awesome however.  Like others have said it lends a neutral profile to the meat so you can use it as you wish.  Sandwiches last night, pulled pork nachos on the menu tonight.  I used a mix of hickory and pecan in the KJ.  

    OP: Are you planning to attend the Indy Eggfest?  I was going to cook but having taken on a new job I wasn't sure if I'd be able to get off and slipped it this year.  I'll be there most of the day.

    Would love to but since I am the Grand Knight of my Council, this weekend is already real busy with a Plane Pull for the Special Olympics, a ministry fair at our Parrish, and Sullivan's being on the other side of town I will have to pass. probably should go but that would just not be right
