First Spatchcock

Hard to believe it took me over a year to do our first spatchcock chicken, but my wife loves the way the beer can chicken turns out so no need until I ran out of time last night. Amazed how fast it went - a small bird (4 1/2 before spatch) and took about an hour. It got a way from me and was a bit over done, but the flavor was excellent. Raised direct (felt level), 375 dome with one chunk of apple, S&P plus fresh herbs, garlic, and butter, basted twice with butter, white wine, and garlic. Egg roasted veggies on the side. Will do this one again!

I have never done a beer can bird that I was happy with. Never spatch'd one that I wasn't! Great lookin' cook. The vegetables looked especially good! Welcome to the spatch club.
I hate it when I go to the kitchen for food and all I find are ingredients!
