How much Buttah?

My first brisket is at 194, and the point is probing beautifully, but I don't know about the flat. Is it supposed to 'disappear' when happy too, or always be a little firmer than the point?

    It will be a tad bit firmer, but should still have the "buttah" feel.

    Pay no attention to the point-it has a much higher fat content and will probe like buttah well before the flat.  And at this point in the game temperature is only a guide as to when to start checking for the flat finish.  The thick part of the flat is the finish-line indicator.  Probes like buttah and you are there. Likely not all will release but when the great majority is there-declare victory and then the cooling rack rest before the FTC.  FWIW-
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    No finish pics, because it's actually not going to be consumed until this week at the campsite, as sliders with a bunch of friends. And beer.
