    Hmmm, an hour to preheat 1" CS???
    Iron, maybe.
    Guys use 1/2" steel on the pizzamaking forum, never heard about it impacting preheating times.  The chief complaint is the added weight on the rack.

    For an ODK, and incorporating a griddle, running NG would be mandatory IMO.
