Fruit crepes

I sampled some fruit filled crepes at an eggfest I attended in Plano TX a couple years ago. I've tried to replicate them once or twice without much success. Does anybody have a good recipe for something like that? Thanks!

Appetizer, Crepes, Mainegg
I love to share recipes. The crepes are just a basic crepe recipe and they freeze GREAT. I do them up in zip lock bags of a dozen.
1. 1 cup of flour,
2. 2eggs,
3. 1/2 c water
4. 1/2 c milk.
5. we drink 2% and so I use that.
6. pinch of salt
7. 2 T melted butter.
8. all into the blender and whirl till smooth. then let this sit for at least 1/2 hour to hydrate the flour. it makes a difference. you can make it the night before also and just whirl it a sec when you are ready to use it. if I know I will use them for sweet rather than savory I will add a 1/2 tsp sugar. but most of the time I never know so I do not bother. I have an old cast iron spider that makes them perfect for me LOL there are all kinds of crepe pans out there but just a no stick will work too with a touch of butter to help it. the filling for the pillows was ricotta, grated mozzarella and parm and a couple of eggs and salt and pepper to taste and then some fresh chopped flat leaf parsley stirred in. I have a small cookie scoop 1/3 c maybe and I used that to plunk a scoop down in the center then folded like a little package. placed on parchment and on the pizza stone and covered with foil and heated them up. indirect. it does not take to long 15 20 minutes maybe? the sauce is the roasted grape tomatoes I think I posted it in the cook book here. SIMPLE and to die for!! 5-6 cloves of garlic crushed and into a 1/2 c EVO to get happy at least a 1/2 hour more is better stir in a box or two of grape tomatoes and cook on the egg till they just start to pop and take off and let cool a little. mix a hand full of fresh chopped basil into a cup or so of feta and stir into the tomatoes. I added some chopped yellow peppers to this for the crepes. just a simple white sauce on the plate, then the filled crepe and the tomato mixture easy peasy. the crepes can be made weeks before, stuffed the day of and then into the frig till needed the stuff for the tomatoes sauce takes minutes. white sauce can ne made in the morning and then heated. I heated my plates also just because of assembling 18 of these I wanted all out there and all hot. cold food is my biggest pet peeve

Dessert, Crepes, Nolaegghead
Crepes are super easy. They work for sweet or savory. Great way to use up stuff in your fridge.
INGREDIENTS:
1 cup flour, All-Purpose
1/2 cup water
1/2 cup milk
2 eggs
salt
PROCEDURE:
1. All in the blender, fire it up, pour on hot griddle. 1-2 minutes, flip, 30 seconds, done. Put stuff in them. Serve.

INGREDIENTS:
1 Cup Cold Water
1 Cup Cold Milk
4 Whole Eggs
1/2 Tsp Salt
2 Cups All-Purpose Flour, All-Purpose
4 Tbs Melted Butter
Procedure:
1. Add liquids, eggs and salt in blender. add flour and butter. Cover and blend for 1 minute. Scrap down good and blend another 2-3 seconds.
2. Refrigerate 2 hours before using. Spray crepe pan w/pam for the first crepe.

1 cup flour
1 cup milk
1/4 cup water
3 tbl melted butter
2 large eggs
Blend well.
Store in fridge for at least an hour to eliminate bubbles.
Make crepes.

No recipe help but welcome aboard and enjoy the journey. Given you were at a fest a few years ago, I'm guessing you have some run time on your BGE(s).
