Boneless Boston Butt

Should I expect any difference when I cook a boneless butt over a bone in? I grabbed a butt last night at Costco and didn't realize it was boneless until I got it home.

Nope. The only difference is it doesn't have a built-in doneness indicator. I actually prefer boneless because adding rub to the cavity where the bone was adds flavor for me. The small lip of meat hanging off finishes first and is a Cook's treat for me while waiting for the rest to finish. You can always tie it to prevent that if it bothers you.

It all pretty much cooks the same. I did a Boneless Boston Butt Roast a couple weeks ago. We're empty nesters so it was a small one that was trussed up in a net to maintain the shape. I did a low and slow over lump charcoal and apple wood. It turned out great. We sliced it up like you would Prime Rib instead of pulling it. Melt in your mouth goodness.Michiana, South of the border.
