Chicken breast chunks and chicken thighs three ways
1. dry rubbed with zatar and granulated lemon peel
2. Yogurt marinated with added zatar, granulated lemon peel and garlic
3. Soaked in @tarheelmatt Greek restaurant marinade.
on the grill now, will report back at the finish line.

All three were really good. I would definitely use the liquid marinade on bone in parts and as Matt said, several day soak would be best. We decided to do boneless skinless breast kebabs and the parts that got the yogurt marinade were definitely more moist. I was a bit heavy handed with the zatar on the dry rubbed ones, but once you get a little tzatziki, onion, etc loaded up, it wasn't too strong. Great flavor on both with the zatar, glad John recommended that.Love you bro!

Have you thought about vacuum sealing with the rub on? I've had great experiences as of late vacuum packing with wet seasoning.
I've done this marinade but vac packed for 1 1/2hr and it was really good.

Thanks, SWMBO bought a boneless leg. I broke in a new SOG Elite 1 knife from woot! by trimming the fat and membrane. Marinated it and some chicken breast overnight (marinade made in blender). Removed as much marinade as I could by patting down with paper towels (important to get a sear) and had one of our dinner guests - Jess - do the actual grilling. She did a great job. Lamb was a perfect MR, chicken tender as SV.
