Why I waited this long?

Got an egg about 9 months ago. Got Sous vide recently Did ribeye at 130 for 2 hours and then into CI for about 30 seconds each side. Very tender. Tasted like filet mignon!  I am not sure why I did not want to use sous vide earlier?
