CostCo Brisket

Gonna give 265 pit temp a shot.  S&P seasoned overnight & made a spritz with vegetable oil, caramelized onions, beef stock, thyme.  Some pecan for smoke.  Jalapaenos & Serranos for my Bourbon baked beans...try to make night before so flavors really blend by next day.  Gonna make some roasted potatoes with garlic aioli & Chinese Ramen wilted cabbage salad. Also have some boneless short ribs to throw on later. Having a Makers Mark 46 Elder to enjoy the evening.

    Sounds like a true banquet coming together.  Enjoy that brisket ride.  About the most fun cook on a BGE.

    Brisket turned out nice, but wasn't impressed with short ribs so put em in slo cooker overnight with some beef stock, bitters, onions & garlic then shredded & covered with Au Jus.  Sandwiches with some of the onions, mustard & they were righteous.  My 1st attempt at burnt ends & although I received a lot of compliments I see where they can be improved. Made some Korean style sesame bean sprouts...one of my favorite  Banchan items.

    Looks great right there and surprised the short ribs didn't meet your target.  Great audible.
    Now, regarding brisket burnt ends- if you want to truly enjoy the premium cut of a packer, slice and eat the point.  Best part of the protein.
    Use pork belly for burnt ends and just thank me later.  ;)

    I completely agree with you Frank @lousubcap, it was a waste of a perfectly good point, but everyone else really enjoyed so I'm sure I'll waste a few more.   I've got pork belly burnt ends in my sights so it'll be something I'll try soon.

    I would offer that there are few in SoCal that could correctly describe how you arrive at burnt ends.  So, just ignore any designs on that sacrifice (or send them to Kansas City) unless pressured by SWMBO and even then... ;)
