I have some cured chicken breast I want to use for appetizers: a razor-thin slice of breast on a cracker spread with goat cheese. Problem is the goat cheese - it doesn't spread well. Any suggestions on how to make it easier to spread? Cream cheese? Sour Cream?[p]TIA

BlueSmoke,[p]Heat up the goat cheese a little bit in the micro. Turns into like cream cheese and spreads like a charm.[p]mShark

I just add a little softened cream cheese-about 3 parts goat cheese to one part cream cheese. Mix well in the food processor. You can add herbs if you like-a little thyme, oregano, parsely, dill or basil-depending on the flavor you want.
