And these are what my local butcher shop had...

Color me confused. Every time I have seen or searched Chuck ribs, they appear as short ribs, and look a lot different. These almost look like St. Louis spares, no? Thoughts?

You can get both short ribs and back ribs. Short ribs are quite popular because they are quite meaty. These look like back ribs.Southeast Florida - LBGE
In cooking, often we implement steps for which we have no explanations other than ‘that’s what everybody else does’ or ‘that’s what I have been told.’ Dare to think for yourself. -
Almost certain those are beef back ribs. That is what is left after boneless rib-eye steaks are cut away. They look better than average. Often, there is very little meat. Less than 40% of the weight. They cook pretty quickly, 'cause its steak meat, and can be pretty greasy from the muscle fat. So tasty, but lots of gnawing on the bone to get what you want out of it.
