Dr. Seuss meets BGE - Green Eggs and Smoked Ham Crumpets (with pics)

Whilst on vacation in Seattle, we found The Crumpet Shop, a lovely little joint backing onto Pike Place Market selling a range of breakfast crumpets (and great coffee of course). The stand out was a green eggs and ham medley, so I decided to make this. The ham was smoked using a single chunk of Big Green Egg applewood in the MM at 135C until IT was 65C.

    That looks great!!  Nice pics.
    Cheers. Shame the smoke shot screwed up but that's life. I'm going to have a crack at making the whole thing on the MM for breakfast tomorrow with two small choppers pans and parmesan instead of applewood cheese.
