Pork Belly - Tried something new on Monday

Fresh Pork Belly..Cooker at 275, indirect heat..favorite rub....Myron Mixon's blackberry BBQ sauce..

Cube up the belly, Inch and a half squares...
Dust with your favorite rub, ensure all sides are coated..
Cook for 3 hrs at 275.
After the three hour mark, put in a half pan with Mixon's Blackberry BBQ sauce and let them ride for another hour and a half.

Unreal is the only word I can find to describe what happens when you eat these right off the cooker.

    • 1 cup Jack’s Old South Vinegar Sauce or Basic Vinegar Sauce (page 22)
               
    • 2 cups cider vinegar
    • 3 tablespoons ketchup
    • 2 tablespoons paprika
    • 2 tablespoons brown sugar
    • 4 teaspoons kosher salt
    • 1 tablespoon hot sauce
    • 1 to 2 teaspoons cayenne
    • 1 to 2 teaspoons ground black pepper

    • 2 cups Jack’s Old South Hickory Sauce or Basic Hickory Sauce (page 22)
    • 2 tablespoons onion powder
    • 2 tablespoons garlic powder
    • 2 cups ketchup
    • 2 tablespoons smoked sweet paprika
    • 2/3 cup cider vinegar
    • 2 tablespoons Worcestershire sauce
    • 1/4 cup (packed) dark brown sugar
    • 2 tablespoons honey
    • 2 tablespoons maple syrup
    • 2 tablespoons kosher salt
    • 2 tablespoons freshly ground black pepper
    • 1 cup ketchup
    • 1 cup honey
    • 1 cup maple syrup
    • 1 1/4 cups seedless blackberry preserves
    • 8 tablespoons (1 stick) unsalted butter, at room temperature

      • 1 cup ketchup

      Blend together... heat but not to boiling, set aside
