Rosemary Garlic Bacon

My buddy wanted to make bacon so we started a batch last week. 2 pork bellies from Costco. 

Smoked it today with some apple and pecan  while putting together some stuff for our shipment to the Soldiers and doing a little work. 

This stuff is awesome. Made BLTs for dinner tonight with homemade bread, a fried egg, pimento cheese, and Blues Hog Smokey Mountain BBQ sauce.

    Which came first the chicken or the egg?  I egged the chicken and then I ate his leg.

    Nice. How is the flavor? I have some belly in a basic salt/sugar/cure equilibrium brine right now. I'm just going to add seasoning the night before smoking.

  • @Eggcelsior it's nice. I've made this one a few times. The flavor is subtle but the garlic and rosemary smell is very great. You don't have that lingering hint of garlic after eating it. 

    Not breakfast bacon but is great for changing the flavor profile on meals and apps
