DoubleEgger inspired sides

@DoubleEgger did a marinated chicken breasts with sous vide potatoes and corn on the cob  whip mayonnaise binder - Looked so good I decided to copy his sides with a reverse seared steak

    Steaks are warming up at 250degrees also made my Parmesan encrusted steak butter to finish them :-) will post finished pics

    Looks Great!
    I would like to add a word of caution on SV water baths.
    Heating a large volume of water to 195 Degrees on a solid surface counter top such a Corian can cause it to crack.
    I know this because I cracked my counter top with a bath that held around 2.5 gallons of water.
    The hot water caused thermal expansion of the top that resulted in a loud pop and a crack. When the counter cooled the crack closed and is virtually unnoticeable. 
    If you have a solid stone counter top, I don't have any experience with them. They may be safe.

    I use a cork trivet on granite just to be safe

    You can experiment with the corn now that you know about the binder. I want to try cilantro next time.
