Pimento Cheese Kobe Burgers
Got my shipment of ground kobe from SRF on Friday so naturally I had to do some burgers. Made up some half pounders and got the egg setup for indirect. Cooked until 140 and finished in a CI skillet, added the homemade pimento cheese after the flip. Flavor and texture of the burger was excellent, super tender and juicy, ended up being a nice med/med rare. Topping them with the pimento cheese was delicious, but kind of took away from beef. Next time I will probably just do a good piece of cheese and light condiments because the burger can hold it's own.

Cheese looks amazing. I you pull 'em at 140 and put 'em in CI to finish there wasn't any medium rare to be found...but ya gotta cooks 'em da way yer peeps likes 'em and if that is med/med well, giddyup!

But I would agree. I had a Wagyu burger a few weeks ago. Just beef and cheese and dill mayo. It was amazing.
I would think the cheese may have distracted from the meat a little. But pimento cheese on a burger with bacon and BBQ sauce is one of my favorites."Brought to you by bourbon, bacon, and a series of questionable life decisions."

@tarheelmatt That's what gave me the idea. Never made pimento cheese before so I just googled it and picked one that sounded good. Used some of the leftover as a dip for tortilla chips, really good!
