First communion brisket, only a few failures an hour in

We asked my son what he wanted for dinner after first communion today. He wanted me to make brisket. First one of the season, feeling a little rusty. Took a few tries to find a costco that had them in stock, but got a 14# prime brisket. Trimmed and seasoned this morning, on the egg around 9. Set up the FB to run the show, and noticed "LOW" on my meat temp probe. Pretty sure I know why and it's my own fault.




I was impatiently waiting for the temp to get up so around 215* I opened the top. Fire got too hot. Thought I had the probe wire routed over the meat but it had flopped over so it was right over the coals. I think I cooked the probe. We'll see if it recovers. Kicking myself... rookie...

Ah, the challenges of the cook but you have been down this road before. Just make sure to foil protect any of the protein outside the shadow of your heat deflector. And then continue to adapt as you go. Congrats on the first communion and enjoy the cook and eats.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

@lousubcap not much you can do except roll with it! got the temp stable, and i figure it will take roughly 8 hours. gotta pull the brick from underneath at some point.

luckily you can find probes on amazon for ~$10-$12. Hope it turned out good.

Pulled and into the FTC at 4 pm. Final temp somewhere around 200. Most of it was probing like buttah so I declared done. Now for beer, baseball,and enjoying some sunshine. Can't wait to taste this thing later.
