Weekend Cooks

My brother came up to North Alabama to visit. Great weekend played a round of golf, might or might not have had a few adult beverages. Cooked some strips on Friday. Yesterday I smoked some meatloaf and a few eggs for breakfast this week. Also, the local seafood market had some fresh oysters. Smoked this Friday till they opened up and ate them raw. Last night I shelled them, put them on to smoke with some Gorgonzola crumbles. Sucky pics. But great food.

     does the smoke penetrate the egg shell? Never thought of trying that before.

  • It does slightly. If you barely crack the egg once it gets done enough. It makes a huge difference.

    Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

    So I'm guessing by smoking the eggs you get the same affects of boiling?

    I put them in ice water/cooking oil mixture directly from the heat. I'd make sure they're cracked a little. Put a top on the them and let them sit for however long. Longer the better as long as the water is really cold. Then, shake the "S" out of em. You may need to replace the ice prior to. Most of mine pop out of their shell with no problem.

    I have done them 2 ways. Cook them first, crack them slightly then throw them on the egg. They get really dry. At least the way i did them. I'd just throw them on raw. When you're smoking something else. Less trouble. Crack them once they're done enough. Good Smokey flavor. Once I get them cooled and peeled. I throw them in a sandwich bag. I eat two a morning. So 2 in a bag. Throw salt and pepper on em. Grab a bag every morning.

    My family loves boiled eggs but I've never smoked them. Any direction regarding temp and time would be appreciated.

  • I normally don't boil them. I put them in an oven at 325 for 30 min. So, I basically just use that for guide. If I'm at a lower temp, I go a little longer. But that's just a guide.
