Veal T-Bone Steaks

Just got back from a yoga class and a trip to my local farmers market. There is a grass fed dairy that vends there and today they had grass fed veal cuts. [p]I've never had veal before, and I'm guessing it's cooked like beef, but if anyone out there eats veal and has some good advice and/or recipes, I'd love to hear your opinions. [p]And just so everyone knows, they use no cages, they are free range, and grass fed, so hopefully all good stuff. We also picked up some fresh milk as well. Pasteurized, but not homogenized. It's so very rich and creamy.[p]Thanks!

Tonia, here is a pic of some I did the other day. Rubbed down with some EVOO and dusted with Kosher, garlic and pepper. Let sit, covered, in the fridge a couple hours. Grilled at 500° for approx 3 minuted a side. You don't really want to over cook.[p]

QBabe,[p]We cook veal all the time. As Rumrunner said, make sure you do not overcook.[p]We coat ours with fresh lemmon juice, kosher salt and pepper.[p]450 to 500 2 to 3 minutes per side, direct, no smoking wood.[p]Cut into a slice of heaven.[p]

Smokin' Todd, I'm sure you could. A little fresh Rosemary on it wouldn't hurt it, either.
