spare ribs

ok been an offset smoker but im gonna deviate from my tried and true fashion gonna do spare ribs as instructed on this forum 275 3 to 4 hours toothpick test and the part that scares me no wrapping wish me luck

    It may take a bit longer. At 250 - 275, I usually expect more like 5 hours.
    BBs are closer to 4.

    I haven't foiled for years. Really, no need for that, or spritzing for that matter.

    You have got this one-just rely on the toothpick for the win.  Check at around 4 hours but as above, likely will run longer.  If you want fall-off-the-bone with no foil you need to progress(?) to the "mush-pick" phase with the tooth-pick after more cook time.
