Reverse Sear Sirloin Tip Roast

Nothing special here, just a weeknight roast on the LBGE. I had this ~4lb sirloin tip roast so I seasoned it with Dizzy Pig Cow Lick. Used largish piece of hickory and a small piece of grape for smoking, ran it indirect at 325 for about 90 minutes until it hit 120 IT. I let it rest, took the platesetter out and opened up the vents to sear it off the rest of way.

Sliced thin. Nice and tender, which I was concerned about as I had read it could get very tough.

Nicely done. I had one in the freezer from the cow we had butchered. Gave it to my brother to grind up for burgers. It made for great burgers, but now wishing I kinda kept it.Large and Small BGECentral, IL
