Leftover pork tenderloin - what to do?

I did my first tenderloins yesterday. 350 direct with some applewood to 145-150. Super easy and tasty with just a bit of rub. Today I have a tenderloin leftover. Olive oil, onion and garlic a can of chick peas and a bit of cayenne over some brown rice. It's gonna be good!
What do you guys do with your leftovers or are there ever any? : )

Add some ham, pickles, mustard and you can slice them up and make cubans. If you are out of bread then just ask @WeberWho

Also good on a biscuit for breakfast.
Your concoction looks excellent as well.Which came first the chicken or the egg? I egged the chicken and then I ate his leg. -

Chile Verde
a pint of chopped meat
a 14 ounce jar of salsa verde
a small diced onion
4 tablespoons of olive oil
a 14 ounce can of chick peas drained and rinsed
a 14 ounce can of Navy beans or Great Northern beans drained and rinsed
a pint of chicken or turkey broth
saute the onion then add the other ingredients. Bring to a boil then reduce heat and simmer a half hour. Salt and pepper to taste. -
I was going to make the Cuban suggestion but someone beat me to it.

Another vote for the Cuban sandwich. We also make soft tacos with it, and egg rolls.
