Looking for going away party ideas

A long time office compatriot is changing jobs and we are holding a going away party/bbq for him next saturday.

Me and 3 other guys at work have been looking for an excuse to get our cookers together and go all out, and we decided this is our opportunity.

We will have (at most) a KJ classic, two large BGEs, a Medium BGE, a mini BGE, 18" WSM, propane cabinet smoker, and a large gas grill.

The crowd will probably be around 30 and we want a wide variety of finger foods and smoked meats. Probably start with a few racks of ribs, a pan of pulled pork, pig shots and ABTs.

Any input from you fellers on unique party accoutrements that would be a fun thing to roll out on an egg??

    Smoked Cream Cheese top with a BBQ rub and served with Ritz crackers. I had this at the Texarkana Eggfest. My six year old ate I whole blocked. I was glad they had like 6 or so.

    I assume this is a cold smoke, served cold?

    @tenpenny_05 Nope smoke at 200 to 250. Let cool and server. Make sure cheese is cold before you smoke. Cold food attracts more smoke.

    i second the cream cheese.  250 for 2 hours works for me.  it does not melt like you would think. you can serve warm or at room temp or cold. i like room temp best but the disappear fast when hot

    How about wings since some people won't eat pork? Then there's grilled pineapple, pizzas on the grill, tacos of various types, and sides cooked on or off the grill.

    I agree you need some chicken added to the list. Also some beef to make sure you get the 4 food groups (chicken, pork, beef, bacon). Pepper stout beef is a good choice for a crowd. You could serve slider rolls for the pork and the beef. 


    Which came first the chicken or the egg?  I egged the chicken and then I ate his leg.

    I really thought this was going to a continuation of you leaving the forum because you bought a KJ.  No party for you!

    chicken or beef on skewers - meat on a stick is always good, cooks quickly on demand and you can marinate many different ways

    you said ribs, a crapton of sliced up ribs always disappears

    Chicken Dillas can be cranked out quick, a fest favorite.
    If you opt out of the PITA ABT prep, ABT dip is nice.

    How about the Fireball Pineapple someone posted on another thread?
    You know now that you mention it, a spit isn't needed.  Chunk the pineapple, marinate, skewer, and rub.
